Appearance:
Light gold with amber-coloured reflections, typical of mature champagnes. The perlage is fine and delicate, almost restrained, but elegant bubbles still rise to the surface occasionally - a sign of the slow maturation over almost three decades.

Nose:
A ripe, complex bouquet with intense tertiary aromas. Cooked apples, dried apricots and honey dominate, accompanied by notes of almond biscuits, caramel and buttered brioche. Slight hints of tobacco leaf, mushroom and a subtle minerality (chalk) add depth. A hint of ripe citrus fruit recalls the freshness of youth.

Palate:
Silky texture with gently integrated perlage. Smooth flavours of baked apple, honeycomb and hazelnut unfold on the palate, underpinned by a subtle spiciness (saffron, ginger). The acidity is present but harmoniously embedded in the ripeness and provides structure. The return of mineral nuances (chalk, flint) adds vibrancy.

Finish:
Long-lasting and multi-layered, with an echo of roasted nuts, dried herbs and a hint of dark chocolate. The final mineral character emphasises the origin from the chalky soils of Champagne.
