Cheval Blanc itself was also a classic at the end of 97 in a French merchant bottling with a very strong colour and fantastic nose and in 2000 in an English bottling the winner of the St. Emilion flight, beautiful, dense young colour, sweetness, still a long way to go. As a chateau bottling in 2005, the wine of the evening, classic Cheval Blanc nose with crazy aromas, still quite young, dense colour, full-bodied, dense, complex on the palate, a really great Cheval Blanc in its purest form - 100/100. In 2006, I was then able to drink this wine again in a tasting from two different merchant bottlings, where the bottler was not apparent. The first bottle was magnificent. Like all Cheval Blancs from this period, it needed a lot of time and air. If you don't decant these wines, or only decant them beforehand, you will miss out on the great Cheval Blanc pleasure. Powerful, aromatic, clearly younger looking, the initial rusticity gave way to more and more silky elegance, a very long, great substance, of which I would have liked to have had considerably more in the glass - 97/100. The second bottle with a similar label, but without any indication of the chateau owner, fell significantly short with high acidity and little charm - 88/100. The purchase of such dealer bottlings always remains a risky, but exciting and often rewarding affair due to the lower price. Most recently in 2007, this perfect chateau bottling needed a lot of time and air. Rustic and closed, there were perhaps just 90/100 in the glass at the beginning, but the wine gained a point every 5 minutes. It became more powerful, more aromatic and developed the addictive Cheval Blanc nose at a snail's pace. At the last sip, I was sure of 98/100. Very dense and powerful in 2008 at René Gabriel's big Cheval tasting, where we didn't give it enough time to develop. In 2009, in a Belgian retailer bottling, it was again a killer colour and incredibly aromatic. Those who drank it too early had 97/100 in their glass, those who gave it a few hours of air came close to perfection. Also still very young in 2009 with the indescribable Cheval perfume in the marvellous nose in a Belgian Thienpoint bottling. This was also still incredibly young, even in its very dense colour - 98/100 (source: wineterminator.com Dr. Becker).
