Appearance:
Bright gold colour with delicate amber and greenish reflections. The perlage is fine and elegant, rising slowly in sparkling chains. The maturity is evident in a slightly creamy texture that captivates the eye.
Nose:
A complex, ripe bouquet that begins with baked apple, brioche and almond blossom. Notes of ripe honey, dried lemon peel and a hint of caramel unfold underneath. Fine mineral accents (chalk, flint) and subtle oxidative nuances of hazelnut and saffron lend depth. A hint of ginger and white pepper rounds off the flavour.
Palate:
Powerful yet elegant. The mousse-like texture is velvety, carried by lively acidity that perfectly balances the ripeness. Layers of flavour of ripe pineapple, Golden Delicious, candied kumquat and roasted almond wood dominate. Notes of salted caramel, clay and a subtle spiciness (star anise) resonate in the background. The structure is linear, almost aristocratic, with an exciting freshness despite its age.
Finish:
Long-lasting and multi-faceted. The final spiciness (white pepper) and mineral coolness (chalk) are accompanied by flavours of dried herbs, beeswax and a hint of smoke. A final burst of citrus jam adds vibrancy.
Overall impression:
A Dom Pérignon that embodies the elegance of the 1993 vintage to perfection. Despite its maturity, the acidity structure is vital, the complexity breathtaking. Here, the power of Pinot Noir (estimated at 50%) is combined with the finesse of Chardonnay to create a timeless work.
