Billecart-Salmon has perfected the longest chilled fermentation in Champagne (up to three weeks), which gives the champagnes their unrivalled freshness. The Billecart-Salmon Brut Réserve, a harmonious blend of 40 crus, is characterised by its subtle complexity with notes of white fruit and a subtle minerality. The Billecart-Salmon Brut Rosé is world-famous, with its delicate berry aromas and coppery reflections created by the exclusive saignée method - the benchmark for rosé champagne for decades.

The prestige cuvée Cuvée Nicolas-François Billecart(named after the founder) shows the full depth and ageing potential of the house in its vintage version. The consistent reduction in dosage is remarkable - even the non-vintage champagnes often contain less than 8 g/l of sugar.
